Armani/Ristorante Introduces A Vibrant Selection Of Spring-Inspired Dishes To It’s A La Carte Menu

Armani/Ristorante, the city’s renowned Michelin-starred dining destination located in the Armani Hotel inside the iconic Burj Khalifa, welcomes the new season of spring with an exquisite selection of seasonal additions to its à la carte menu. Curated by Executive Head Chef Giovanni Papi, the new dishes celebrate the freshest spring ingredients, bringing vibrant colours and bold flavours that embody the essence of the season.

The carefully crafted menu features a range of starters, fresh pastas, hearty mains, and decadent desserts, each offering a contemporary twist on authentic Italian cuisine. Among the enticing new offerings are Uovo in Primavera, a slow-cooked mountain egg paired with Krystal caviar, asparagus, orange, and smoked foam, and Battuto di Manzo, a Wagyu stockyard tartare served with Krystal caviar, Pink Lady apple, puntarella, and black rice chips.

Pasta lovers can delight in the Tortelli, a homemade Wagyu-filled ravioli with Sardinian artichoke, pecorino fondue, black truffle, and tarragon jus, and Linguine Monograno Felicetti, linguine with sea urchin, green agretti, including candied Amalfi lemon. For a true celebration of spring, The Pasta Fresca offers homemade green pea and fennel ravioli, seafood, and clam sauce.

The main course options are equally indulgent, with highlights such as Spigola Selvaggia, line-caught wild sea bass served with green and white asparagus with an elixir sauce, and Guancia di Wagyu, braised Wagyu cheek accompanied by heirloom cauliflower and spiced jus. For those seeking a rich, luxurious dish, the Manzo Stockyard features Wagyu tenderloin M-5, foie gras terrine, broccolini, beetroot, black truffle, and Arabica jus.

For dessert, guests can indulge in sweet creations such as Baba’, a citrus-infused baba with apricot, vanilla, and thyme Chantilly for a refreshing finish, or Noci, a walnut and pecan emulsion with light praline mousse, gavotte, and Guanaja 70% ice cream for a satisfyingly rich experience.
