Salmon Guru Dubai Launches Its First Ever Food And Drink Pairing Experience

Salmon Guru Dubai, the award winning Madrid born cocktail bar known for its boundary pushing approach to mixology, has introduced a new chapter in its experience-led offering. For the first time, the bar moves beyond standalone cocktails to unveil a dedicated food and drink pairing menu, bringing the bar and kitchen together in a more considered and immersive way.

Designed as a four course journey, the new pairing menu is built around contrast, balance and progression. Each cocktail is matched with a dish that enhances its flavour profile, creating a seamless interplay between drinks and food, rather than treating them as separate elements.  

The experience begins light and vibrant, with Green Lantern, a basil and elderflower infused agave cocktail layered with cucumber, lemongrass and green apple. Paired with Textures of Papaya & Sea a delicate papaya salad with togarashi sautéed shrimp, green beans, tomato caviar and sakura shrimp, finished with a light spice dressing. Referred to as Green Chaos, this opening pairing is designed to awaken the palate, where tropical fruit, herbs and subtle spice meet seafood umami, creating a fresh, fizzy and energetic start to the journey.  

The second course, Tropical Fury Mode, introduces a deeper and more layered flavour profile. At the center is Pantera Jackson, a silky milk punch of agave and pisco infused with spicy mango and a touch of savoury depth, that is perfectly paired with Orkney Scallops dressed in wakame seaweed and a kimchi orange vinaigrette. The combination brings together sweetness, fermentation and ocean minerality in a way that feels  bold yet balanced, where the drink enhances the natural sweetness of the scallops while the dish amplifies the cocktail’s complexity.  

As the experience progresses into After Hours Luxury, the flavours deepen and become more indulgent. Modern Times, a rich bourbon based cocktail layered with amaro, bitters and dark cherry notes, is paired with Wagyu Picanha Tataki finished with umami oil and roasted pumpkin purée. This pairing is designed to deliver warmth and depth, where the bitterness and herbal notes of the cocktail cut through the richness of the wagyu, while the sweetness of cherry and pumpkin creates a rounded, comforting finish. 

The journey concludes with Sweet Sins & Silk Suits, a refined and elegant finale. A spirit forward twist on the Vieux Carré, built on rich aged distillates layered with subtle nutty sweetness, is paired with a Cheesecake Soufflé served alongside wildberry gelato and crisp cherry elements. The result is smooth, creamy, designed to linger on the palate and leave a lasting impression. 

Available daily and priced at AED 650 per person, this new menu marks a natural evolution for Salmon Guru Dubai. Known for its theatrical and experimental approach to cocktails, the introduction of a structured pairing experience adds a new layer of storytelling, where each course builds seamlessly on the last to create a cohesive and immersive narrative.

The result is not just a tasting menu, but a curated progression of flavours designed to surprise, contrast and complement at every step.
