- The Galette, is a beautiful classic French cake, ideal for sharing. In celebration of the holy month, this flaky inverted puff pastry is filled with a rich almond and hazelnut frangipane, complemented by a date, saffron, and cardamom syrup that adds a local twist. Serving 6 to 8 people, this indulgent galette is perfectly suited to communal gatherings during Ramadan, from iftar desserts to family evenings together.

A refined harmony of flavours: light saffron-infused chocolate mousse made with Nicolas Berger’s 75% Ecuador, layered with sea buckthorn crémeux and saffron, a vibrant blackberry-blueberry confit, soft chocolate sponge, and a crunchy lotus base – finished with fresh berries for an elegant touch.

- Celebrating the Jasmine flower, which blooms all year round in the right climates, the Jasmine is an elegant dessert which is harmoniously made up of a crunchy praline base, layered with Japanese white vanilla sponge, Morello cherry and raspberry confit, jasmine & dark chocolate crémeux, all coated by a light Jasmine mousse. The Nicolas Berger chocolate crémeux, from Ecuador, reveals floral notes sublimating the fragrance of jasmine, all resting on a soft Japanese biscuit and a dark chocolate crunch.
