Meet Cocina Tres, the vibrant new coastal Mexican restaurant and bar at the Pullman Hotel in Business Bay, where bold flavours, radical design, and Latin hospitality come together to create a home for newcomers and regulars alike. Inspired by the houses of Mexico City’s legendary architect, Luis Barragán, the interiors are an immersive sensory experience. The guests walk past the brightly colored geometric columns and walls, traversing an ever-changing, shapeshifting composition that leads them to the stunning succulent garden terrace, where the colours and the sunlight conspire to seduce.
Rustic wood beams, rough-textured walls and hand-crafted tiles transport the visitors into a hacienda overlooking the water. Tiger masks from the state of Guerrero hold watch over the tiled Ceviche Bar.
Every detail has been created by skilled artisans to set the stage for the culinary team.
Led by a team of chefs from Mexico, the menu champions traditional techniques, including handmade tortillas ground on a custom-built molino using imported Oaxacan corn, paired with fresh seafood and show-stopping wood-fire grilled specials. Guests can dive into the dedicated ceviche bar, taste a variety of homemade salsas, and share plates that explode with rich spices and punchy flavours.
“Every dish at Cocina Tres tells a story,” says Executive Chef Brandon Arriago. “The menu draws inspiration from regions across Mexico – from southern corn tortillas to northern flour varieties, and moles rooted in central traditions. We wanted to capture the true essence of Mexico through its diversity and cultural richness.”
Signature dishes include the Baja Fish Taco, inspired by the flavours of Baja California’s coast, and the Fideo Seco, a comforting plate of Mexican vermicelli and prawns bathed in a smoky chipotle tomato broth, served sizzling to the table. The showpiece, however, is the Pescado Zarandeado, a local whole fish grilled Nayarit-style over wood fire and brushed with a rich red adobo, a dish that captures the heart of Mexico’s coastline and the spirit of Tres itself.

Curated by the beverage manager Askar Choriev, the bar is just as much of an adventure, featuring artisanal mezcals, house-infused spirits, frozen margaritas, and signature cocktails. Highlights include the Chavorruco, a bold twist on the Negroni infused with earthy beetroot and mezcal smoke, and the Mezcalada, a refreshing Baja-style mix of mezcal, beer, spice, and lime – each crafted to bring the spirit and coastal breeze straight into your glass, making every dinner turn into a memorable event.
