The new menu, crafted under the direction of the new Executive Chef Koyi Tanabe, redefines Italian classics through fresh ingredients, elegant plating, and playful touches that make every dish both comforting and contemporary.

Arrogante’s new menu captures the essence of modern Italian dining with signature creations and refined classics alike. Guests can indulge in highlights such as:

  • Ricciola e Mandorla – marinated amberjack with caramelised onion jus, pink pepper, toasted almonds, and spicy cucumber.
  • Beef Cheek Plin Ravioli – saffron and Parmigiano foam, veal jus.
  • Branzino alle Erbe – seabass fillet in herb crust with leeks purée and sundried tomato.
  • Zucca e Polpette Pizza – pumpkin purée, fennel sausage, and pecorino.
  • Carpaccio di Gambero Rosso – Gambero rosso with stracciatella, pistachio crumble, and tomato water.
  • Orecchiette di Pesce Spada – Homemade orecchiette with swordfish ragù, sundried tomato and parsley.

To complement the experience, Arrogante’s menu also includes a premium caviar selection served with classic condiments, and a selection of succulent Wagyu cuts, from tenderloin and ribeye to the signature Tomahawk, grilled to perfection.
