Dinner by Heston Blumenthal, the one-Michelin-starred restaurant at Atlantis The Royal, has launched a culinary tribute to The Fat Duck’s 30th anniversary, featuring a dedicated tasting menu that showcases iconic dishes from Heston’s three-star restaurant. Since 1995, Heston Blumenthal’s groundbreaking first restaurant, The Fat Duck in Bray, England, has captivated diners with its originality and exceptional creativity. Now, Dinner by Heston Blumenthal is serving a limited-time tasting menu, available until Sunday 30th November.
Paying homage to Heston Blumenthal’s legendary restaurant, guests can expect a playful and inventive dining experience. To begin, guests are served the Aerated Beetroot (c. 2011), a complex, bite-sized dish filled with horseradish. Though humble in appearance, this course takes three days to create, using equipment commonly found in a laboratory. Next comes the Red Cabbage Gazpacho (c. 2001), served with a scoop of Pommery grain mustard ice cream. This is followed by another bold and unconventional flavour pairing, the Roasted Scallop (c.2001) with white chocolate and caviar.
As guests progress to the main courses, the complex flavours and exciting combinations elevate further with the Turbot Veronique (c. 2005), which pairs Muscat grapes, mussels and parsley, as well as the most historic dish on the menu, the King’s Venison (c. 1066), which is carefully assembled with beetroot, black truffle and umbles.
To conclude the tasting menu experience, guests are served two desserts, the Taffety Tart (c. 1658) dressed with crystalised fennel, apple arlette and rose petals; followed by a showstopping finalé, prepared tableside, theNitro Scrambled Egg and Bacon Ice Cream (c. 2000), a theatrical display that exudes Heston’s signature touch of magic.
Merging historical British gastronomy with modern cuisine, this menu offers a delicious glimpse into Heston’s fascination with bringing science into the kitchen. To elevate the experience, guests can choose from three wine pairing options, the Adventurer for AED 850, the Maverick for AED 1,550 and the Anniversary for AED 4,250.
