TOTÓ Dubai Introduces New Summer Dishes Inspired By The Flavours Of Italy

TOTÓ Dubai, the refined Italian restaurant, known for its nostalgic elegance and soulful cuisine, is delighted to announce a selection of new summer menu additions. Now available, the new dishes are a tribute to the coastal charm and regional diversity of Italian gastronomy, designed to capture the essence of summer through fresh ingredients, thoughtful technique and captivating presentations.

Among the new antipasti, guests can enjoy the Insalata di Polpo, a refreshing octopus salad layered with green beans, datterino tomatoes, violet potatoes, and a bright citronette dressing — an ode to southern coastal flavours. The Bruschettone al Pomodoro brings the simplicity of a Tuscan summer to the plate with grilled sourdough, garlic, ripe tomatoes, and fresh basil, while the Sauté di Cozze — inspired by the seafood traditions of Naples — features mussels sautéed with garlic, non-alcoholic white wine, parsley and chili for a warm, aromatic start.

The new pasta and risotto additions showcase Italy’s rich culinary regions. The Ravioli di Brasato, handmade pasta stuffed with braised beef and served with parmesan cream, draws on northern comfort, while the Tagliatelle alla Bolognese is a classic from Emilia-Romagna. The CarnaroliRisotto, elevated with

carnaroli shrimp, Amalfi lemon, and coral sauce, brings a coastal elegance, while the Gnocchi allaSorrentina, baked in tomato sauce and fresh mozzarella, with basil and parmesan cheese celebrates Neapolitan tradition. The CalamarataalloScoglio, made with mussels, clams, shrimps, and calamari, is a nod to the flavours of the Mediterranean.

For mains, the GamberoniallaMediterranea presents grilled shrimps in a vibrant Mediterranean sauce, while the Guancia di Vitello Brasata offers slow-cooked veal cheek with mashed potatoes and demi-glace — rich, comforting and classically Italian. The Verdure Grigliate, a medley of seasonal grilled vegetables, rounds out the experience with freshness and balance.
