Open nightly for dinner from 6:30 PM to 1:00 AM, the restaurant brings its celebrated Indian cuisine to Dubai, with a menu rooted in culinary traditions from across India, defined by bold, layered flavours.

The menu spans Nashta, Kebabs & Tikkas, Game & Chops, Curry & Biryani, and Sabzi, featuring all-time favourites including Kid Goat Methi Keema & Salli, Tandoori Masala Lamb Chops with Walnut Chutney and Chicken Butter Masala. These sit alongside dishes created exclusively for Dubai, including Jackfruit Ghee Roast, Makhmali King Crab & Malai Pyaaz, Imli Black Cod with Peanut Chutney, Wagyu Beef Sukka with Bone Marrow, Malvani Sea Bream and Goat Shank Nihari.

Set across two levels with an additional terrace, Gymkhana Dubai has been designed by Samuel Hosker of North End Design alongside Karam Sethi, evolving the distinctive design language established at the Mayfair flagship for its new Dubai setting. The material palette has been recalibrated with warmer timbers and lighter green hues, creating a brighter interpretation while retaining the character and elegance of the original.

Founded in London’s Mayfair in 2013 by siblings Jyotin, Karam, and Sunaina Sethi of JKS Restaurants, Gymkhana is one of the UK’s most in-demand restaurants. Taking its name from the elite social and sporting clubs of India, the restaurant pays homage to the institutions where members of high society gathered to dine, drink, socialise, and celebrate. After earning its first Michelin star within nine months of opening, Gymkhana was awarded a second Michelin star a decade later in 2024, cementing its status as a defining name in classic Indian dining.

Like London, the menu draws inspiration from the rich culinary traditions of North India, complemented by influences from the South and West, with bold, layered flavours rooted in tradition. Spanning two levels and a terrace with seating for up to 137 guests, the DIFC restaurant, designed by Samuel Hosker of North End Design alongside Karam Sethi, reinterprets the Mayfair flagship’s distinctive design through a lighter green palette, bespoke Indian stained-glass and rattan and cane detailing, reeded timber panelling, Murano lights, taxidermy, a captain’s board and artwork referencing the history of India’s gymkhana clubs. 

The ground floor features two dining areas with warm lantern lighting, patterned ceilings and plush booth seating around a bar finished in Indian marble, while the lower-ground floor, accessed via a mirrored staircase, introduces ornate chandeliers, a striking Peacock Bar and a mirrored, jewellery-box ceiling – a space that seamlessly transforms from a dining room into a private dining room, seating up to 14, or accommodating up to 30 people for standing parties.

Before the sign, there’s the scent. Beans turning slowly in the Kairos’ Bellwether Shop Roaster, the UAE’s first, with the rich aroma escaping through the door and into the streets outside. Follow it, and the room does the rest of the work: a wide window spanning the full width of the venue from the front door, drawing daylight through an open floor plan until it reaches every corner, upstairs included. At its centre sits the Coffee Assembly, a two-metre circular communal table, hand-carved from a single block of stone brought over from India by SHED Studio, the Surat atelier behind it, built, like everything SHED makes, to age with the hands and stories that touch it.

Somewhere behind the counter is ‘Groove’, Kairos’s head barista, and he is as much of its soul as he is its sound. He moves between orders while his own playlist threads quietly through the room, settling around the coffee bar’s natural red limestone counter, and turning Kairos into the kind of place people choose to linger. Nothing here is explained on a wall or dressed up to be sold. Kairos was built this way deliberately, working to a Wabi-Sabi philosophy, stripping out anything that competes for attention. No oversized branding, no decorative clutter, but a space that encourages coffee, conversation and craftsmanship to become the decoration instead. 

The scent behind Kairos has a source, and it’s the first thing anyone actually sees: the Bellwether Shop Roaster, sitting in full view at the centre of Kairos, doing openly what most coffee shops do behind a wall. Celebrated as the first Bellwether in the UAE, the fully electric, ventless roaster produces zero harmful emissions, and roasts beans daily, in small batches, close enough that guests can watch the colour change in real time. Nothing about it is theatre for its own sake. It means the beans in the bag on the counter that morning were still green a few days ago, and the cup of coffee in a guest’s hand was, until recently, roasting in this particular machine, in this particular room, doing exactly what they’ve just watched it do.

From roaster to cup, nothing at Kairos sits around waiting. Beans move from roast to grind to brew in days, not months, so the coffee that reaches the table was, in a real sense, made for that guest and no one else. The V60 pour-over is treated less like a menu item and more like a small ceremony held at the Coffee Assembly table: unhurried, precise, worth watching. Alongside it sits single-origin coffees, each chosen for the particular way it behaves in the cup. Kairos takes this further still; a new pour brewed through the day and shared with whoever happens to be at the table, turning the ceremony into something guests taste together, rather than order alone. 

The food programme runs on the same conviction; everything scratch-made, on-site. Croissants are laminated by hand and baked fresh before the doors open, the Twice-Baked Cashew Nut version, unique to Kairos, sent back into the oven until the edges turn brittle and dark, the inside still soft enough to pull apart. On the savoury side, a dish called Eggs on Eggs on Eggs does exactly what it promises, three preparations of egg stacked onto one plate, playful in name, precise in execution. By afternoon, that same kitchen turns out a small selection of dishes such as the Beef Short Rib Bowl, built around succulent pulled beef, avocado and mango, for guests who came for coffee and stayed through lunch. Max’s Madeleines close things out, arriving warm, built around contrast: brown butter against dark chocolate and sea salt, matcha against sticky toffee. Nothing at Kairos is done through shortcuts. Every dish, from the freshly baked pastries, to the plates made for savouring are made by hand; slowly and with purpose. Kairos would rather do a few things extraordinarily than many things adequately.

Look past the roaster, and the same instinct is everywhere a hand might land. The wooden trays that carry every coffee to the table, also by SHED Studios, hold pressed leftover wood dust from their own carving process back into the grain and set into small imprinted squares cast in tenax, that read almost like a coffee stain in mid bloom – a quiet secret between the maker and whoever notices. The linen vests the baristas wear were hand-embroidered in small runs by Kissagoi, a textile studio in Surat. None of it was chosen to look artisanal. It’s the plain fact of who actually made the room – and Kairos intends to keep that relationship visible, with its walls given over to craft exhibitions on a rotating basis.

For August, the walls at Kairos belong to What Remains of Faces, a ceramic wall mural by Kamal Alzubi, made from thirty individual hand-pressed pieces, each one a face caught mid-emergence, unwilling to be finished or forgotten. The piece comes through Kairos’s collaboration with House of Clay, an Emirati, women-owned and women-run studio working from its own Dubai atelier, known for handmade artworks and bespoke commissions. It’s a fitting first feature for a room built on the same instinct: that the people who make things by hand deserve to be named, not just credited. 

That same openness carries into how Kairos plans to spend its time. From cupping sessions to curated gatherings, Kairos has built a rotating calendar of events, designed to give people more than one reason to return. Their walls too, are handed over to house upcoming artists, local creatives and inspiring brands, another way of keeping the room in conversation with the people around it.

For Shiraz Sarwar, who founded Kairos after years spent building a delivery-only coffee brand, the difference is a personal one. “The human connection that building a delivery business could never give me is something I feel a lot closer to while building and running Kairos,” he says. “Being able to speak to people who walk in through the doors in real time, and take them through what we’re doing, make them a part of our journey – it’s unlike anything, and most rewarding to me.”

Even some of the smallest decisions in the room came down to instinct rather than plan. “We really listened to our instinct on certain elements around the space, and one example is the Coffee Assembly table by SHED Studios,” Sarwar says. “We wanted to celebrate the V60 ritual, and this extension of the coffee bar let us do that. It’s something I was really glad about when it came to taking that design direction.” He’s just as passionate about what he hopes it adds up to. “Kairos is designed to be a place that takes its time to do things just right and not rush through,” he adds. “I hope our regulars come to experience the anti-convenience and unhurried way of life at Kairos, as we do.”

The ancient Greeks had two words for time. Chronos was the clock: measured, sequential, the time of schedules. Kairos was the other kind: the moment that arrives on its own terms, and is gone the instant it goes unnoticed. That’s the moment Kairos Coffee Assembly is built around. Not a transaction, but a place worth returning to, for the ritual, the unhurried conversation, and the people who end up gathering there.
